Cooking: An Ancient Chemical Art
Every morning, as the first rays of sunlight filter through the kitchen window and fall upon a sizzling pan where an egg is being fried, a subtle and complex chemical world is quietly unfolding. Protein molecules unfold, restructure, and cross-link under high temperatures; fats melt, flow, and react with other molecules under the influence of heat; water evaporates from the edges of the egg white, leaving behind a soft, gel-like structure. This entire process, seemingly a simple cooking action on the surface, is actually a grand microscopic chemical celebration involving billions of molecules. Understanding this point is precisely the starting point we want to take you on an exploration journey through this book.
The Origins of Cooking: Humanity's Encounter with Fire
To understand why cooking is fundamentally a chemical art, we must first trace its historical origins. Cooking is not an invention by humans, but rather an accidental encounter with natural forces, and humanity's subsequent initiative to master and utilize that power.
Homo Erectus and the Spark: An Encounter That Changed Human Destiny
Approximately 1.5 million years ago, our ancestors, Homo erectus, began using fire. This event holds milestone significance in human evolutionary history, although the initial use of fire may have simply been the utilization of natural wildfires rather than the active creation of fire. Archaeologists have discovered ash and charred bone fossils dating back approximately one million years at the Wonderwerk cave site in South Africa, which represents one of the earliest known evidence of human fire use.
However, what truly changed human destiny was the ability to actively control and use fire. Approximately 400,000 years ago, Neanderthals in Europe and Homo erectus in Asia were already capable of starting fires intentionally. The acquisition of this ability gave humanity its first mastery over heat, a fundamental natural force. Heat, or thermal energy, has since become the oldest and most direct chemical tool that humans possess for transforming the material world.
The Chemical Nature of Fire Cooking: From Roasting to Refined Cuisine
The primary methods of fire cooking used by early humans were roasting and smoking. Placing food directly over or beside a fire, using flames and hot air to heat food—this seemingly simple cooking method is actually a complex thermochemical reaction process at its core.
When a piece of raw meat is placed near a flame, its surface temperature rapidly increases. This temperature rise triggers the denaturation and coagulation of protein molecules within the meat. Protein denaturation refers to the destruction of their three-dimensional structure under the influence of heat, causing previously folded molecular chains to unfold and expose new chemical groups. Coagulation occurs when these unfolded protein molecules collide with each other and form new chemical bonds, transforming the loose gel-like structure into a rigid network—the microscopic mechanism behind the crispy crust that forms on the meat's surface.
Simultaneously, triglycerides in fat cells begin to melt under the influence of heat. Melted fat not only provides lubricity to the food but, more importantly, fat acts as an organic solvent, becoming a carrier for many flavor compounds and pigment molecules. As fat penetrates into the heated food tissue, the volatile aroma compounds it carries also diffuse outward, captured by our nasal passages—this is one of the sources of the distinctive aroma of roasted meat.
The Domestication of Fire: From Instinct to Skill
As humans became more skilled at using fire, cooking gradually evolved from an instinctive behavior to a deliberate craft. Approximately 10,000 years ago, with the advent of the Agricultural Revolution, humans began cultivating crops and domesticating animals, resulting in a significant increase in the variety and quantity of food. This change directly propelled the advancement of cooking technology.
The invention of pottery was a revolution in culinary history. Approximately 9,000 years ago, people living along the Yangtze River in China began making and using pottery. The emergence of clay pots enabled humans for the first time to heat water to boiling temperature (100°C, at standard atmospheric pressure), thereby developing boiling and steaming cooking methods. The boiling point of water is an extremely important temperature threshold in cooking, creating conditions for a new series of chemical reactions.
Boiling and roasting may seem merely different heating methods, but chemically, they trigger completely different reaction networks. During boiling, food is immersed in a large amount of water, with heat transfer occurring primarily through water convection. Water has a relatively high specific heat capacity, approximately 4.18 joules per gram per degree Celsius, meaning water can absorb substantial heat with relatively small temperature changes, thereby providing food with a relatively mild and uniform thermal environment. Under such conditions, proteins undergo denaturation, but the rate and extent differ from direct roasting.
More importantly, the presence of water enables a chemical reaction called "hydrolysis." Hydrolysis refers to the process where water molecules participate in the breaking of chemical bonds. In cooking, one of the most important hydrolysis reactions is protein hydrolysis. When proteins are heated in water, their peptide bonds may be attacked by water molecules and broken, producing smaller peptides and free amino acids. These smaller molecules have greater volatility and can more easily release into the broth—this is one of the sources of the savory taste in meat broth.
From Experience to Science: The Accumulation and Systematization of Culinary Knowledge
Through the long course of history, humans accumulated extensive culinary experience. This knowledge was passed down through generations via oral tradition, master-apprentice relationships, and written records, gradually
