Chapter 1: Why Do We Need 'New' Food?
Little Strawberry Berry began a thrilling global journey from a tiny red seed. She first sprouted in a sunny greenhouse, needing precise water droplets, warm sunlight, and nutrient-rich soil. Then, she was carefully picked, packed into cardboard boxes, boarded a refrigerated truck, traveled hundreds of kilometers, and finally arrived on supermarket shelves. Along the way, she faced many challenges: a sudden hailstorm wilted her leaves; during transport, the truck’s air conditioning broke, and she and her companions almost melted from the heat; at the supermarket, some friends were bruised from squeezing and ended up in the trash. Berry couldn’t help but wonder: “Why is my journey so long and fragile? Is there an easier, safer way for me and my food friends to reach the table directly?”
Berry’s adventure is actually a microcosm of the global food system. Today, most food on our tables follows the “traditional agriculture” model: grown or raised on farms, then harvested, processed, transported, distributed, and finally reaching us. This system has been operating for thousands of years, but today it faces unprecedented pressure. Let’s be detectives and uncover the three “super challenges” of traditional farming!
Population Growth: Earth Became a “Hungry Giant” Imagine Earth as a giant with a constantly rumbling stomach! In 1950, there were only 2.5 billion people on Earth; today, we exceed 8 billion, and by 2050, we’re expected to reach 10 billion. Every second, about 4 newborns arrive, equivalent to adding a small football field’s worth of people every minute! So many people need to eat, and traditional agriculture is like an old bicycle trying to climb a hill with an ever-heavier load. To produce more food, humans have cut down forests, drained wetlands, and turned natural ecosystems into farmland. But land is limited—only about 10% of Earth’s land surface is suitable for farming, and much of it is already degraded or polluted. More tricky is that most new people live in cities; they don’t farm but need food shipped from afar. It’s like making a hungry giant eat a small mountain of food daily, while the delivery trucks are becoming fewer and more congested.
Climate Change: Weather Becomes a “Temperamental Magician” Traditional farming relies entirely on weather—sunlight, rain, temperature. But climate change has turned weather into a temperamental magician who changes faces randomly. In the past, farmers could plant according to seasonal patterns; now, extreme weather events like droughts, floods, heatwaves, and cold snaps are becoming more frequent. For example, in 2022, Pakistan’s catastrophic floods submerged 1/3 of farmland, losing millions of tons of wheat; in the same year, Europe experienced its worst drought in 500 years, drastically reducing corn and sunflower yields. Pests and diseases are also “on the move”—warmer climates allow pests and pathogens to spread to higher latitudes, threatening previously safe farmlands. Worse, agriculture itself contributes about 1/4 of global greenhouse gas emissions (mainly from livestock and fertilizers), creating a vicious cycle: agriculture causes climate change, and climate change destroys agriculture. Little Strawberry Berry, if in a greenhouse, might stop growing due to abnormal heat; if in the wild, a hailstorm could wipe out her entire field.
Land and Water Shortages: Every Drop and Inch of Soil is “Crying Out” Agriculture is the largest water user, with about 70% of global freshwater used for irrigation. But water resources are extremely unevenly distributed: in India and northern China, groundwater is over-extracted, causing water tables to drop by 1-2 meters annually; in Africa’s Sahel region, drought has dried up rivers and cracked farmland. At the same time, urbanization is eating up farmland—China converts about 300,000 hectares of cultivated land to construction each year, equivalent to 420,000 football fields. Soil is also in crisis: globally, 33% of soil is moderately to highly degraded, mainly due to erosion, salinization, and organic matter loss. If we continue farming traditionally, by 2050 we might need an additional 600 million hectares of farmland (almost the size of China!) to feed 10 billion people, but this is nearly impossible because good land is already exhausted. More ironically, 1/3 of food produced globally is wasted each year (about 1.3 billion tons), and the land and water resources used for this wasted food could feed 2 billion people! Traditional agriculture is like a leaky bucket: we pour water (resources) into it frantically, but the bucket has many holes (waste, low efficiency).
Faced with these challenges, humans began thinking like “future table magicians”: what if we could skip or remodel the long chain of traditional agriculture and “synthesize” food directly in labs or factories? Synthetic food isn’t the “artificial meat” of sci-fi movies, but a collection of innovative technologies, including cultured meat, plant-based alternatives, fermentation-produced proteins, 3D-printed foods, etc. Their core idea: produce more nutritious, safer, and more sustainable food with less land, water, and energy.
How Synthetic Food Becomes “Magic” Imagine traditional agriculture as a big tree: roots (land), trunk (water), leaves (climate) must all be healthy to bear fruit (food). But synthetic food is like learning “soilless cultivation magic”: 1. Cultured Meat: Take a small muscle tissue sample from an animal (like chicken feathers or cow skin cells), grow it in a bioreactor with nutrient broth, and in weeks it becomes edible meat. This requires no animal slaughter, reduces land use by over 9
